Mexican coffees tend to be lighter bodied with mild flavours.
This coffee comes from the Sierra Madre highlands in the southern state of Chiapas, Mexico. It is sourced from the Campesinos Ecologicos de la Sierra Madre de Chiapas (CESMACH) cooperative. The farms of the CESMACH are located at an elevation of 1,200 to 1,750 MASL in the El Triunfo Biosphere Reserve. This forest reserve area is one of the most diverse in the world and contains Mesoamerica's largest cloud forest, as well as a protected natural environment for thousands of plant and animal species. All of the coffee produced here is shade-grown.
CESMACH has nearly 500 active members and is managed by Sixto Bonilla, who is very quality-focused and driven to empower his cooperative community with the tools and resources to produce better quality.
